#1 BBQ Brisket Con Queso

One 6 to 7 pound Birsket
12 oz of ground black pepper
4 oz of dried red peppers
8 to 10 oz of provolone, cubed into 1/3 inch cubes
8 to 10 oz of cubed white cheddar (prefferably irish cheddar) in 1/3 inch cubes
Fillet open the brisket and insert the cheese. Tie the brisket closed with twine. Smother the outside of the brisket in the mix of black pepper and red pepper. Heat up your bbq using wood or charcoal. Preferably wood and get a little bit of applewood with the mix of the regular wood or charcoal. Heat to the point that the cheese inside is melty and serve.
